There are usually three kinds of rum in the cup you’re about to mistake for a milkshake. That’s the whole lesson, honestly, but let’s take our time with it, because the mistake is delicious and it will absolutely sneak up on you in the September sun.

If you’ve spent any time on this stretch of coast you’ve seen the Bushwacker without knowing its name — the frozen, chocolate-brown drink in the tall cup that everybody at the beach bar seems to be holding at two in the afternoon. It looks like dessert. It is not dessert. And a first-timer who treats it like a smoothie is the most predictable story on the beach.

what’s actually in the cup

A Bushwacker is blended, not shaken — ice, dark rum, coconut rum, a coffee liqueur, a little crème de cacao, and cream of coconut, whipped together until it comes out the color and thickness of a chocolate malt. Some bars float a bit of extra rum on top. Some add a spoon of vanilla ice cream and call it their secret. They all taste like a coffee-and-coconut milkshake and hide their intentions completely.

The story locals tell is that the drink was born up the road at the Sandshaker over on Pensacola Beach back in the ’70s, and the whole Gulf Coast adopted it as house policy. Whether or not you buy the origin, the tradition is real: this is a coast drink, and down here it’s practically a food group.

how strong is “strong”

Strong enough that the cold and the chocolate erase the alcohol entirely, which is the trap. One Bushwacker is a lovely afternoon. Two is a decision you should make on purpose. Three is a nap you did not schedule and a golf cart you should not be driving.

So: pace it, eat something first, and have a plan to get home that isn’t you. This is the single most underestimated drink on the beach — people who’d never do two margaritas at lunch will knock back Bushwackers like they’re from the ice cream truck. Don’t be the afternoon cautionary tale. And sip it — pull too hard on that straw in this heat and you’ll earn a brain freeze that’ll fold you in half.

where they pour the good ones

You’ll find a Bushwacker at just about every beach bar the length of Perdido Key Dr and on into Orange Beach, and the Flora-Bama right on the state line pours them more or less continuously. Quality varies more than you’d think — a good one is balanced and cold all the way down; a bad one is a melting sugar bomb. Ask a local or a bartender where the good ones are; people have strong opinions and will happily share them.

Figure somewhere in the low-to-mid teens per cup at a beach bar, and check /happy-hours/ before you go — some spots run them cheaper in the afternoon window, which is exactly when you want one anyway.

the small stuff nobody warns you about

A few things that separate the smooth operators from the sunburned:

It melts fast. In full September sun a Bushwacker turns to brown soup in about fifteen minutes. Drink it in the shade, or keep it moving. If you’re deciding whether it’s a sit-in-the-shade kind of day at all, you can read the beach and the flags from the cam before you commit to a spot.

You can adjust it. Want more punch? Ask for a floater — a little extra rum poured on top. Bringing the kids? A “virgin Bushwacker” is just the milkshake with the cargo left out, and they’ll think they got away with something.

It’s an afternoon drink, not a noon-on-an-empty-stomach drink. Get lunch in you first. The people who look serene at four o’clock ate at one.

That’s the whole briefing. It’s a wonderful, ridiculous drink and it’s part of what makes an afternoon down here feel like an afternoon down here. Just remember what’s under the chocolate, respect the sun, and let somebody else drive.
