There isn't one permanent champion — kitchens change, and "grouper" on a tourist menu is sometimes a different white fish. What real grouper is like

Thick, white, big flakes, mild and slightly sweet, and it holds together when fried. If your "grouper" is thin, mushy, gray-ish, or oddly cheap, it probably isn't. Real grouper costs the kitchen real money, so a suspiciously low price on a permanent menu is a tell. Kitchens that name the fish on a specials board — "today's grouper is gag" or "red grouper in" — are the ones actually buying it. Ask; the good places like being asked.

Ordering it right

Fried is the classic and hides nothing; blackened is the local favorite and shows off the fish; grilled is the healthy option that's only as good as the cook. Get it on a soft bun with lettuce, tomato, and a little tartar or remoulade — anything more is covering for something. Sides: fries or slaw.
